I am looking for a web service where I can publish an online calendar in which I offer open time slots on a first-come, best-dressed basis.

Clients fill in when they would like to come and as slots are filled, will no longer be available as options for other clients.

What services can offer this?

You could use Google Calendar for this, just make the calendar public
