I know only Ubuntu that uses it. Are there others?

Do you mean linux distros? Well, you can install Gnome on almost any linux distro that that has X installed on it. A few I know that have Gnome 'preinstalled' are:

  • Fedora
  • openSUSE
  • Debian

but there are many, many others

Additional to Callum Rogers' answer, you can have a look at DistroWatch which has a very close to complete list of all distributions which are out there. The search function is very powerful, which let's you easily search for all known Distributions with Gnome as default desktop environment.
