  1. We are considering migrating our Linux hosted, courier-imap/qmail email solution to Google Apps.
  2. Big question: Can we easily download all the email to migrate to another platform if Google Apps doesn't meet our needs.
  3. How specifically do you export/migrate away from Google Apps? a. email b. documents c. calendars

You can easily download all the mail for an individual user by using an IMAP based mail client.

Individual Google Docs can be downloaded in a variety of formats (OpenOffice, Excel, etc) depending on type of document.

Calendars can be exported (again, individually) in .ics format.

I don't know how you'd batch download all of a user's documents, or all email for all users.

Presumably you could whip up some scripts to do the job, if necessary.
