You can easily download all the mail for an individual user by using an IMAP based mail client.

Individual Google Docs can be downloaded in a variety of formats (OpenOffice, Excel, etc) depending on type of document.

Calendars can be exported (again, individually) in .ics format.

I don't know how you'd batch download all of a user's documents, or all email for all users.

Presumably you could whip up some scripts to do the job, if necessary.
