System Preferences > Bluetooth. Find your keyboard device in the left pane, select it, then the little button with gear icon opens a menu with a Rename option.

Try this

System Preferences, Keyboard and Mouse, Bluetooth Tab, Change the keyboards name to something else (can't leave blank)

In newer OSX's it is SystemPreferences/Bluetooth, select the device, then lick the setting "wheel" at the bottom, which has a Rename option. – J P Feb 27 '13 at 8:18
