I like to file some types of mails under multiple labels (normally one for an overall category, and one that's far more specific).

As far as I can see to do this automatically with GMail's filters you need to create two (or more) filters with the same rule, each one adding a different label.

Eg

Matches: to:(football@mydomain.com)
Do this: Apply label "Sport"

Matches: to:(football@mydomain.com)
Do this: Apply label "Football"

Is there any way to combine those filters into one?

That and there's a large part of me that dislikes the inefficiency of it, and how it fills up the Filters page with rules so fast! – GAThrawn Aug 11 at 20:43
