I cannot figure out, when running Spell Check in any Microsoft Office program, if it is possible to change the default from "Ignore Once" to "Change" so that I do not repeatedly tab down to "Change".

You can right click > add to dictionary... I think that's what you're looking for.

I'm sorry- I figured I was not clear. I want to have the pop-up dialog box for Spell Check to not default to "ignore once" -rather I want the default button that is activated to be "change". EDIT: HOLY KEYBOARD! I can't believe I never used the keyboard shorcut. Appreciate you prompting my thinking. – leeleblanc Apr 14 '11 at 16:01
