I used to use Visual Paradigm for UML with my mac, it had an OS X version, I'm not 100% sure if it's not based on Java but it shouldn't matter since Java comes standard with all Macs.

The program also comes with a free Community Edition, which I found useful if you want just UML. It's possible to create all UML diagrams with the community edition.
