I have MS SQL Server Data Centre Edition but I'm worried my server machine will be sluggish in performance with this edition, and also it's overkill for our small company, so my preference is to install MS SQL Standard Edition. The problem is that we obtained the software illegally from a peer to peer torrent sharing website and we do not want to pay for the software in any way as we have already spent the company budget for database software on pizza and beer. Can somebody advise how we might strip features from SQL Server Data Centre Edition to make it behave like SQL Server Standard Edition?

Here's an answer. Don't steal software and don't come to Superuser to ask how to make it work and how to conceal it from your employer.
