I can't remember the name of it, but there is open source software that lets your organize your ideas, but letting you create leaf nodes from your main idea.

What is this type of software called, so I can search for both free and commercial options?

The technique is called "mind mapping". One such piece of open-source software is FreeMind, but there are others.
