Are tor relays insecure? By this I mean; if anyone can run a relay, how is my anonymity guaranteed? Are there any whitepapers on this?
For example; if I connect to a relay are they able to trace my IP address?

your anonymity is not guranteed, but it is very hard to find out who you are, because all tor nodes carry traffic no only for themselves, but that of other nodes.
this means your traffic does not go immediately to its desitnation, and although the first node you connect to knows who you are, they don't know if the traffic coming from you is for you.
