I read that letting apps run in the background, they will simply fade away and not use resources. I wanted to know how long is a general fade away? Is there a way to control it? Can I monitor this status for all the running apps at once? If possible, can I prevent some of them from closing down?

The new task manager has been revised to monitor them. Read here on how to open it and use it.
Especially the app history tab can be interesting to see how much they've used.
Besides opening them every now and then I don't think there's a way to change that behavior.
