I've tried many multi-protocol IM clients, they all try to group my different protocols into one interface. I'd like to keep them separate, can you suggest some clients which offer this style of interface?

Simply having an icon of the protocol is not good enough, I want separate lists (or tabs, even).

Digsby does that. Available for Mac OS X, Windows and Linux.

Under Features - Personalize:

You can organize buddies manually, by status, by service, by name or by log size to place those you communicate with most at the top. You can even choose a secondary sorting method.

You could also try to use contact groups, i.e. by grouping all your contacts for a given protocol in a dedicated group.

In this way, you will have a single contacts list but with collapsable and expandable groups that will behave in the way you want.

I don't know what OS you use, but I suggest trying Pidgin, I haven't used it recently but IIRC it should have this feature.
