I've been looking around the Windows 7 website and I couldn't find info on actually getting it. For example, do they offer a trial ISO and then you can buy a license. Can you go to a store, buy a DVD and install it without doing Internet stuff?

While you don't need the internet, you still have to activate somehow. Phone activation is the alternate method. – Will Eddins Oct 30 '09 at 1:42

You can buy it right from Microsoft, from any retailer like newegg, and in stores! The only trial I know of which is still available is the preconfigured VHD for Virtual PC. The only online requirement is to activate and update the software. Updating you can do through phone though and updates aren't necessary if you don't want them, although they are highly recommended.

There is an Windows 7 Enterprise 90-day Trial but that probably isn't the version you want if it is for personal use as you can't buy that retail:

After the 90-day Trial expires, if you wish to continue to use Windows 7 Enterprise, please note that you will be required to purchase and perform a clean installation of Windows 7, including drivers and applications. Please keep this in mind; Windows 7 Enterprise is not available through retail channels.

Yes. There's activation to worry about, but I believe you can do that over the phone. You could with XP, anyway.
