Whenever I try to uninstall anything now in Windows 7 - via the Control Panel > Uninstall a program route, the "Preparing to remove" dialog appears, and nothing else happens.

I was uninstalling iTunes (all the various components of it one at a time) and got down to the Apple Mobile Device support, and that got stuck on "Preparing to remove". I tried rebooting, but get the same, and now no matter what I choose to uninstall - not just Apple stuff - it just gets stuck.

Any ideas anyone?!

I would suggest that you rollback your computer to a system restore point from before you uninstalled iTunes, then try again carefully using Revo.

I decided to leave the dialog for a long time to see if anything happened. After over an hour it decided to uninstall! Now, it seems to take a normal amount of time to uninstall other stuff.
