How do these anonymous vpn's work , They say you can browse the web using a different IP address different to your own.

How does this work ?

I understand the Virtual Private Network model , I am just confused on how I browse the web with a different IP ?

They proxy your connection. If you really want to remain anonymous, you better hope they operate in a country that does not cooperate with authorities in your home country.

Browsing websites via a Proxy is not the same as an Anonymous VPN.

There are many services that do this sort of thing, my favourite is Hidemyass

You said how does it work... Well, the simplest way of explaining it is the follwoing:

Imagine telling a friend to visit a website for you, saving the file and sending it back to you. If there are any forms or fields to fill in, you tell your friend what to write in them then he sends it on, and returns the results to you.

Replace the word friend with Proxy, and make it all automatic, and that is pretty much a dumbed down version of what is happening.
