When connecting over POP3/IMAP externally (ie Thunderbird from non localhost) the report from port25 i get back is

From what i can tell, Roundcube connects over IMAP so im nto 100% sure what the differnce is for it to be correct externally, and not from localhost

What could i do to make roundcube send messages correctly ?

Looks like you have used local submission from RC via LMTP, not SMTP. In that case there is no sender domain an DKIM signature can't be formed at all. –  Kondybas Jan 29 at 19:58
