Is there a way to change the size of the drawing area in Google Docs / Insert Drawing?

When you select Insert Drawing in Google Docs you are giving an area to draw.

How can I make this area larger so I can draw more, i.e. create larger PNGs?

I don't think it's possible. You can make the drawing larger once it's on the page, but I don't think you can make the drawing area bigger.

Zoom out then expand the drawing window.
