Is there any 1) "scientific", 2) visible, difference between connecting an Xbox 360 with HDMI versus with a component cable?

This link provides the official graph of which resolution is supported for which cable type. The xbox360 supports 1080p over component for games. If the option isn't listed then make sure your xbox360 has had its system updated via XBL. If you want the higher resolution for HD-DVD or upscaled DVD you'll need the HDMI cable.

Component can only handle a maximum of 1080i, while HDMI can handle 1080p.
