I'm going to mark your answer as the solution because it appears to be the correct tool for what I want to do... however I should note that I can't use it yet because I get the following error when I use grsync: rsync -s unknown option. I did a quick google and it seemed like a can of worms so I'll have to dig into it later when I have time for a project.

Cool. Thanks for the feedback. I'm testing out Transmit right now for ftp. It has a slightly different feature set, but the interface is WAY more intuitive. Probably going to be worth the $34.

AHA! I didn't realize I was supposed to use the site manager that way. I was using the bookmarks alone and I couldn't figure out why the local directory would change, but the remote wouldn't. I guess I'm still confused why they would call them "global bookmarks" if they don't actually connect to the new server (unless you've already connected that particular site in the site manager), but at least I know how to do it now. Thanks.
