What editors are you using? Some of them may have options for this hidden away somewhere in the settings window rather than the save dialog. It does sound like it might be a bug in Mavericks or something wrong on your system though.

Just another thought, but are you sure the CPU isn't underclocking itself due to overheating? A tool like SpeedFan will show you the temperatures.

There is also LatencyMon (resplendence.com/latencymon) which could be worth a go for tracking down which driver is responsible.

The CPU you have is a particularly fast model and I would expect it to perform very quickly even when it scales down to its lowest operational power state. Your problems could be related to a bad driver causing DPC latency issues. There are a few tools for checking this issue but the one I have heard recommended, DPC Latency Checker (thesycon.de/deu/latency_check.shtml) is not accurate on Windows 8.

My point is that magnetic hard disk drives have long had error correction systems built in but this is required for normal operation and not made particularly obvious to the end user. SSD's are a different technology but the same thing applies.

This is easily researched, just Google SSD ECC and you get articles like micron.com/~/media/Documents/Products/…. It's not a simple case of having ECC or not, it's a case of what levels are present. Consumer-grade SSD's are normally going to have some kind of basic ECC that will generally be adequate for most people but enterprise-grade models are often required to have more sophisticated methods to meet the more stringent demands for reliability.
