@Ron By using your command you are imaging your whole drive to a single partition. You will not be able to easily read the data from there by just mounting the partition afterwards (actually, the partition won't be mountable anymore). I suggest reading the manpage of ddrescue and using image files instead (see my second suggestion).

If both partitions are located next to each other and the Windows 7 partition comes first, its file system can be easily expanded to use the free space from the deleted second partition. Just follow the 4 steps and you should be done - formatting is not necessary.

Yes, ssh for a bootloader may be too much overhead; nevertheless the LUKS way works fine. I don't need a powerful all-in-one bootloader, I just need something that works with Windows like LUKS does with Linux.

@Martin You can try changing rename s/$/.bak/ $f; to mv $f $f.bak; in the loop if rename doesn't work. Also, I edited my answer/script to filter duplicates by just remembering a found line and ignoring subsequent matches.
