Does this work for previous boots? The problem I was experiencing when I wrote this question (resolved now, thankfully) was only occurring intermittently. So say, every other boot, it was Kernel panic on me, and what I wanted to do was on the next successful boot, review the log file, find the previous boot, and try and debug.

Definitely a Parallels problem with FileVault. The latest update to Parallels 7 (7.0.14922) seems to have fixed it - kb.parallels.com/112281 - if you want to submit this as an answer @Nano8Blazex then I'll mark it as resolved. Thanks for your help.

@Nano8Blazex I think it's highly probably that that's the issue I'm experiencing. Though it's an MBP not an air, and it's definitely doing a full reboot after I've typed in the credentials. I'll try using those tools mentioned when in Safe mode. Although, as mentioned above, I couldn't get into safe mode properly last time I tried. Thanks for the tip, I'll update in comments if this is indeed the problem, and invite you to submit this as an answer.
