If rsync gets interrupted, you will still be left with a temporary file. It just helps you by not having to copy existing files over. What you actually need for persistent sessions is GNU screen as poste by Jake.

What do you mean by "fork a cp or mv process"? Usually shell already forks and executes those programs. What is your goal? Resuming copies? See rsync.

@JB0x2D1 Install a server (nginx for example), change its configuration to listen on at least the OpenVPN tun/tap interface (or all addresses). After that, you can access your media via the webservice listening on the OpenVPN server's private IP address. Do not forget to configure permissions appropriately, i.e., the nginx user must be able to read files and descend directories.

@TNW I got used to typing HISTFILE= instead of unset HISTFILE (which is also a tiny bit longer). There is no specific reason for doing it this way.

Setting HISTFILE= is enough. From bash(1): If unset, the command history is not saved when a shell exits.

By default, socat TCP-LISTEN listens on all interfaces. To limit to one specific network interface (e.g., localhost), use the ,bind=127.0.0.1 option. To allow multiple connections to the server, add the ,fork option. Making a read-only server? Add -R to the EXEC command. In the end, it will look like this: socat TCP-LISTEN:7777,fork,bind=127.0.0.1 EXEC:'/usr/lib/sftp-server -R' (on Arch Linux, I had to use /usr/lib/ssh/sftp-server instead).

If your phone is rooted, I suggest to run tcpdump on it via ssh/adb. Then use wireshark to open the pcap file with the filter http (this assumes that the communication happens over HTTP, not HTTPS or some other protocol).
