You're going to need Java for way more than you think. Especially since a huge number of websites use java applets. Java is like .NET Framework; it's something you may not use often, but it's a pain in the rear end if you don't have it. Personally, I'd recommend simply updating it and letting it sit there.

Something is wrong with your question ... I figure that you meant the end time in the "becomes" column to be 2:45 pm which is outlook's default behavior. This, however, cannot be changed, as this would mean changing the duration of the event; which Outlook undesrstands as "static"

It's a good solution. Booting from the Windows Recovery DVD will most probably get your Windows install into a running state; but, as @ZippyV said, chances are that you'll destroy the Linux bootloader, forcing you to re-install it later.

Yes, I'm pretty sure that you have to restart the server to get everything working correctly. Also remember to run the X11 configuration software, or modify the xorg.conf document according to instructions.

Probably the easiest way is to connect using SSH or whatever interface you are using now, logging in and then typing in 'startx' (no quotes). If this returns an error by the likes of "command not found" or similar, you don't have a graphical user interface installed and will have to start working on that. You might want to check with Amazon about user conditions first.
