I should also mention that it depends what sort of Sandy Bridge processor you get. If you get a very high-performance processor compared to a lower-power consumption processor, that obviously makes a difference, since even within SB there are differences among processor classes.

Compared to Nehalem? Yes. If you have a Nehalem processor or are thinking of getting one, just go with that.

@slhck: Also when you remove your backup disk do you just unplug it or do you "Eject" then unplug it. If you're not properly removing it OS X Time Machine may get confused and think it still has to backup to something.

Try playing a HD video with the wifi off and see if you can reproduce the problem. If you can it's probably your CPU overheating.

I agree with @Kyle, Samba is probably the easiest way to go. If you want to set a static IP in Ubuntu just open a Terminal and type ifconfig. Find the port for your wireless or ethernet LAN that you're using (usually eth0 or wlan0) then type ifconfig eth0 <static-ip-here> replacing <static-ip-here> with something like 192.168.0.50

@Linker3000, I actually didn't see that, sorry. But "tech savy" isn't really descriptive on the capability or lack thereof of someone setting up a completely brand-new, unfamiliar system. For example, a 7-year-old who knows their way around a computer and mobile devices could be considered "tech savvy" Just putting that out there.

@Moab: I know that. But if you make your own NAS you generally don't use Dlink/Drobo/etc. Hence no web GUI. My point is, if you want a nice Web GUI you can't build a NAS system yourself, you have to buy one.
