You need to reinstall grub, to do this you may be able to boot into linux from the grub rescue prompt or use a live cd/usb. I really don't understand why you wouldn't simply use a live cd/usb? Instead of wasting time I'd be more interested in getting my system working again.

Its nice that you don't want to use MAMP and learn more about the command line. I'll suggest next time you install it in someplace in your home directory and then change your path to use your binary first. A similar approach is taken by homebrew you should give that a look. Always better to use a package manager than compiling and installing packages, it should be a last resort. All the best.

You could log into the computer with your windows live account I think. Not sure though. This is an awesome tool pogostick.net/~pnh/ntpasswd but I've only tested it upto windows 7. Take a crack at it. All the best.

The set top box has the following outputs TV out, SVideo out, Audio L and R and one USB Port. I don't know if its SVideo, there are three small outlets with Yellow Red and White colored wires going out into my TV.

Doesn't work that well, you need a vmware server on your network to which it exports the image. I had no luck with it.

Also to make the image, you should run a live cd with the disk not mounted. Store the image on another disk.
