I try to setting up wordpress to display my posts such as

http://www.example.com/postname 

but the default url is

http://www.example.com/blog

When I try to use custom structure for urls such as /%postname%/ , wordpress generate urls with blog word http://www.example.com/blog/%postname%/.

I think that this changed in wordpress 5 version.

How can i delete blog word from url? Is this possible?

If you assign a different category to the post it will show up under that category.

The /blog/ URL will always display the archive of all blog posts from all categories though, you just aren't required to use it.

I believe all posts require a category, I'm not aware of a way to post to a non-category, which would be required to have posts without a /category/ showing. Pages will post to the site public root /%postname%/
