I have my device connected to router with Internet connection.

If I change my device IP address to a different subnet, it continues to work. For example, the router is 192.168.0.1, my device is 192.168.20.100.

Obviously, it should not be able to work. However, in the above setup, I'm able to surf google.com, or apple.com just not my own website or serverfault.com.

What are they doing differently that allow the connection to still work?

In terminal, curl www.google.com, works. However curl www.serverfault.com will return

"Unable to resolve hostname".

The issue is that client will always use Google sites as benchmark. They will tell us that their Internet is working fine, since Google or YouTube are working. Is it our server at fault instead?

They use ipv6, which is independent of ipv4 which you changed.
